Southwest Chicken Salad Lunch Prep

Ingredients:

1 pack boneless chicken breasts
1 can black beans
1 can corn
half red onion
1 bag southwest tortilla salad strips
1 southwest ranch dressing bottle
1 tablespoon olive oil
Southwest seasoning – I mixed together Lawrys seasoning salt, lemon pepper, Mrs. Dash garlic & herb, & a small dash of cumin.
3 Hearts of Romaine

 

Directions:

Cut chicken breasts into small pieces, put chicken and olive oil in pan on medium heat, season chicken with season mixture, continue to stir around chicken allowing season to touch both sides and cook well.

Rinse and cut romaine lettuce and place in large bowl.

Dice red onion

Gather your tupperware containers – fill with lettuce, top with chicken, corn, beans, diced onion, and tortilla strips and repeat! for as many days you want it. That should make 4-5 salads.

I have a fridge at my work so I just brought the entire bottle of dressing with me and added it to my salad when I got ready to eat it. 

VOILA!
