Memorial Day Shindig πŸ‡ΊπŸ‡Έ πŸ΄πŸŽΆπŸŒŠβ˜€οΈ

Memorial Day is here! Always a good long weekend:) Our plans usually consist of swimming, grilling out, enjoying outside, eating, drinking some delicious cocktails & eating some more πŸ™‚ I have some delicious recipes and music playlist perfect for Memorial Day!

First & obviously most important (food)

Buffalo Chicken Dip

{adapted from the back of the Frank’s Red Hot bottle} lol.

2 cups shredded cooked chicken – I used Hormel canned chicken.
1 (8 oz. pkg.) cream cheese, softened
1/2 cup FRANK’S RedHot buffalo sauce.
1/2 cup blue cheese or ranch dressing – I used both.
1/2 cup crumbled bleu cheese or your favorite shredded cheese – I used a Mexican blend shredded cheese & blue cheese crumbles.

I put it all together in a pot on the stove and just kept mixing it all together. Made sure everything was melty and cheesy and then dipped some tortilla chips in it. Super easy and super TASTY πŸ™‚

Marks Famous Cheeseburgers

{adapted from his sweet sweet MiMi}

INGREDIENTS:

2 lbs hamburger meat
2 eggs
1/2 cup Italian bread crumbs
1 packet of spicy ranch seasoning
4 tablespoons dales seasoning (Mark would literally drink this out of the bottle)
Your favorite cheese (We prefer pepper jack or Colby jack)
Sesame seed hamburger buns

DIRECTIONS:

Combine in large mixing bowl hamburger meat with eggs, bread crumbs, ranch packet, dales seasoning and salt and pepper to taste. Once mixed well. Scoop a handful and mold into medium size patties. Once all patties are formed. Put those babies on the grill! Grill them to your taste (I prefer all my red meat well done). Once cooked to your liking. Add cheese and all your delicious toppings!

*Topping suggestions- bacon, lettuce, onion, tomato, bacon, jalapeno, ranch dressing, blue cheese crumbles, fried egg, ketchup, mustard, mayo!

Oh and throw a couple hot dogs on the grill and make them good and crispy πŸ‘ŒπŸΌ

Ashley’s Cripsy Mojo Carnitas

INGREDIENTS:

1 boneless pork butt
2 tablespoons of jerk seasoning
1 heaping tablespoon cumin
1 cup chicken broth
1 teaspoon black pepper
1 tablespoon salt
1 tablespoon olive oil
1 teaspoon cayenne pepper (optional)
4 cloves of garlic chopped
1 white onion chopped

DIRECTIONS:

Heat olive oil in large pan over high heat. Add meat and brown on each side, once browned put meat in crock pot.

Add all the remaining ingredients to crock pot. Stir all together. Cook on high for 4-5 hours. Once the pork is completely cook and tender remove from crock pot and SHRED. Remove fatty pieces. Once shredded, put all back in crock pot and stir together with all the yummy juices. You can stop right there and eat up! OR to crisp it up a little bit, add the pork to a shallow casserole dish, sprinkling the juices on top of pork. Broil on high for 5 minutes. remove and ENJOY! you can have sandwiches, tacos, salads. Whatever your little heart desires.

 

 Pile that crispy mojo goodness on a sandwich, some tacos, a salad whatever your little heart desires.

8. Georgia Satellites – Keep your hands to yourself. {it’s the Kentucky in me}

Favorite Cocktails

Good ol’ bourbon & coke. {Kentucky bourbon & Coca Cola on ice} yes please.

Leinenkugel // Grapfruit Shandy & Summer Shandy. {fave} – buy 6 pack. Remove cap. Drink delicious beer. 

Blackberry Mojito. {YUMMY!}

8 mint leaves
12 blackberries
2 tsp extra fine sugar or agave syrup
Ice Cubes
4 oz light rum
2 oz fresh lime juice
Club Soda

DIRECTIONS:

In the bottom of a mixing glass or cocktail shaker, muddle together the mint, berries, and sugar/syrup. Add ice, rum, and lime juice, cover and shake for about 20 seconds, or until the cocktail is very cold. Fill a Collins glass with ice and strain the cocktail into the glass. Top with club soda and garnish with sprig of mint.

Whisky Rock’A’Roller.

INGREDIENTS:

 2 tablespoons sugar // 5 raspier berries // 1 ounce lemon juice // 3 ounces Kentucky-style bourbon // 1/2 ounce strawberry liquor // 4 dashes of rhubarb bitters // garnished with 1 sprig of mint. 

DIRECTIONS:

Crush sugar & 4 raspberries in bottom of glass with spoon. Add bourbon, juice, liquor, & bitters. Fill with ice; shake to chill. Strain into desired glass with ice; garnish with remaining raspberry & mint.

My all time fave- The Bloody Mary. 

Zing Zang Bloody mix with vodka of your choice, a salted rim or old bay rim. Some green olives and done. So good.
