Mozzarella, Spinach & Pesto Stuffed Chicken Breast

Mozzarella spinach and pesto stuffed chicken breast {own creation}


2 cups shredded mozzarella

1 cup baby spinach – fresh

1/2 cup basil pesto

2 boneless chicken breast

1 teaspoon olive oil

salt & pepper

dash of garlic powder

6 tooth picks


heat oven to 425 degrees // slice chicken breast almost in half like a sandwich but make sure it is not cut all the way through // open up chicken breast and spoon the pesto evenly on the inside of each // next layer spinach evenly on each chicken breast // then top with your shredded mozzarella // close up the chicken breast, make sure to keep all the good stuffings inside the chicken pocket // once closed, hold it together with your tooth picks, 3 tooth picks each chicken breast should do it // drizzle olive over top of chicken breast // salt & pepper each // dash of garlic powder on each – just a small amount // then layer the top of chicken breast with more shredded mozzarella cheese // bake chicken for about 50 minutes. my oven took closer to an hour. just make a small slice in thickest part of chicken to make sure it is cooked through.
