Friends with kids.

Thank you lord for these angels sent down from heaven to help us parents get through our insane lives. It’s like an instant bond when meeting new people..

Soo yeah Sunday night we went to our fave parent friends house for a night of homemade pizza, beer, good music, and crazy kids running around. Ahhh the good life. The Palmer’s invited us over to grill pizzas on their Big Green Egg grill. Grill pizzas? I know right. I was like what do you mean grill a pizza? But ohhhhh man. We were in for a treat! So much fun and sooooo delicious! And Riley and Lora Leigh (their daughter) are Besties so it was a great night!

Me- “Hey babe should I wear these pants tonight?”

Mark – “yeah they look fine”

Me- “babe you always say that, I mean do they look good honestly or should I wear something else?”

Mark – “Honestly you look like Missy Elliot in those pants, they are the ugliest things I have ever seen”

Me- “ummmmmmm ok, I love these pants, I wish I had some in every color”

Mark – “Ok Missy”

Also that day Mark and I went on a boat tour with Amelia Backwater Adventures and omg it was a blast. Seriously we had so much fun. So you get your own little power boat and follow a tour guide around the island and then over to Cumberland island (which is amazing) the trip is 3 1/2 hours long! You get a little personal cooler and a dry storage space for other items! We had a blast! When we parked the boat at Cumberland Mark tried to step out of the boat and help the guy dock us and it was deeper then he thought and he fell in hahaha.

So that excitement was all on Sunday. Saturday was another eventful day for the Hogan’s. We took the ferry over to Singletons and ate lunch out on the deck. Umm if you have never had singletons. Right now is the time to go have it. Because it’s delicious fresh seafood and really cool atmosphere! Also the ferry is always fun to ride 🙂

Theeennnn on the way home we stopped at driftwood beach! So pretty and lots of fun! Riley loved it 🙂

Tuscan Chicken Pasta     {this recipe came from delish.com}

Ingredients

  • 12 oz. spaghetti or angel hair
  • 1 tbsp. extra-virgin olive oil
  • 1 lb. boneless skinless chicken breasts
  • kosher salt
  • Freshly ground black pepper
  • 6 slices bacon
  • 2 cloves garlic
  • 2 c. diced tomatoes (canned or fresh)
  • 3 c. baby spinach
  • 1/2 c. heavy cream
  • 1/3 c. grated Parmesan
  • Basil, for garnish

Directions

  1. In a large pot of salted boiling water, cook spaghetti or angel hair according to package directions until al dente. Drain and reserve 1 cup pasta water.
  2. Meanwhile, in a large skillet over medium-high heat, heat oil. Season chicken with salt and pepper and cook until cooked through, 4 minutes per side. Transfer to a cutting board and slice into strips.
  3. In a second skillet, cook bacon until crispy. Transfer to a paper towel-lined plate and drain, then chop.
  4. Pour off half the bacon fat and to skillet add garlic, tomatoes, and spinach and season with salt and pepper. Add heavy cream, Parmesan, and 1/2 cup pasta water and let simmer, then add spaghetti or angel hair and toss until fully coated.
  5. Add chicken and bacon and toss, then garnish with basil and serve.

Teriyaki Chicken Pineapple Boats    {this recipe came from buzzfeed.com}

INGREDIENTS
1 large pineapple
1 tablespoon canola oil
1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
¾ cup soy sauce
¼ cup packed brown sugar
¼ cup honey
3 tablespoons sesame seeds
2 cups cooked white rice, divided

PREPARATION
Cut pineapple in half, lengthwise. Use a spoon to scoop out the flesh of each half, leaving about a half-inch on the sides to make sure the pineapple boats are sturdy. Discard the flesh or set it aside to eat later, and drain any juices.

Heat the oil in a large skillet over high heat. Add the chicken thighs and cook, stirring occasionally, 2 minutes. Add soy sauce, brown sugar, and honey, and stir to combine. Bring the mixture to a boil, then turn the heat down to medium-low and cook, stirring occasionally, until the sauce is thick and the chicken is cooked through, 8 to 12 minutes. Add the sesame seeds and stir to combine, then remove the pan from the heat.

Scoop a cup of rice into each of the pineapple boats, then divide the teriyaki chicken among the boats and serve.

2 slices of fresh soft bread

Boars Head cracked pepper turkey

1/2 avocado

publix pepper jack cheese

Boars Head cranberry horseradish sauce

Slice avocado and place ingredients on bread as you desire.

YUM!!! favorite lunch sandwich 🙂
