So superman just came on and I’m like super into it and can barely write this blog post.

We have been living with my dad temporarily while starting the journey to buy a house. Well it’s been real and it’s been fun but it ain’t been real fun! We are on a new journey to find a little rental while still staying on the house buying journey. Dad has been great but we need our space.

“So yay we are moving again!” – said no one ever.

Came to Ocilla this weekend to visit mark’s family for Halloween & The Sweet Potatoe Festival. Riley was in the parade. I asked if she wanted to do the parade and she said yes only if she can wear a wig πŸ˜‚πŸ˜‚πŸ˜‚πŸ˜‚ she was dressed as Glenda The Good Witch. The theme was The Wizard Of Oz.

It was also FL/GA weekend so we were very festive for that!

Β The time change has thrown me off! It’s very confusing for me haha, so dark at night and so light in the morning. At night I’m like when is it going to be 8? I’m ready to put my kids to bed! And in he morning I’m like “GET UP WE ARE LATE HURRY UP, MOVE MOVE MOVE!!!!” When really we have like 2 hours and we are perfectly fine.

Recipes—

SLOW COOKER BBQ RIBS

2 slabs of baby back ribs

1 bottle of BBQ sauce of choice- I use sweet baby rays honey BBQ

half a teaspoon of garlic salt

/

put the ribs in crockpot

Sprinkle garlic salt all over ribs

pour BBQ sauce all over ribs, use most of the full bottle

cook on high for 5-7 hours – keep checking tenderness

once meat is cooked, pour the crock pot in a deep casserole dish, squirt the remainder BBQ sauce on top of ribs and put in the oven on broil for about 10-15, until top is crispy.

JACK-O-LANTERN PEPPERS

orange bell peppers- make sure to get ones with 4 points on bottom so they will stand up

1 rotisserie chicken

1 can black beans

1 can corn

1 can diced tomatos with green chilies

1 teaspoon cumin

1/2 teaspoon cayenne pepper

1 teaspoon garlic salt

1 teaspoon pepper

shredded cheese – Mexican blend

First I stripped the chicken, I removed all the chicken I possibly could off the bones.

Next combine chicken, pepper, garlic salt, cumin, cayenne pepper, tomatos, black beans corn in a pot on stove. Since the chicken is already cooked, just mix the pot on medium heat to let everything mix together.

While chicken mix is heating, start on your peppers, first remove the tops of your peppers and clean out peppers, once cleaned, cut your faces on peppers, once faces are cut, start some boiling water on the stove and boil your peppers & tops until the peppers are tender, still want them to be strong enough to stand though! Remove peppers once tender and start stuffing with your chicken mix, pack full, place in a casserole dish standing up and sprinkle the tops with your shredded cheese, bake at 350 degrees until cheese is melted. Done!

Note- you can make the chicken mix in the crock pot of you want, I just started late and didn’t have much time so I opted for the already cooked rotisserie chicken!

WILD CHICKEN POT

1 bag baby carrots

1 package baby Bella mushrooms

1 head of cauliflower

4 large chicken tenders – I use the large frozen bag of chicken tenders from Publix.

2 cans cream of mushroom

1 can cream of chicken

3/4 box orzo pasta

1 teaspoon pepper

1 teaspoon garlic salt

pour all ingredients in the crock pot except the pasta and cook for 3-5 hours on high. Checking chicken throughout.

prepare the pasta and mix together in crockpot.

All done! I added some hot sauce to mine for that extra kick!
