You guys seriously. There are no words or blog posts to describe Disney. Especially taking your children for the first time and it’s your birthday. I was so overwhelmed with happiness when we got there I almost cried. No lie, there was a show happening at the castle as soon as we got up there and as Mickey and Minnie were singing and the glitter was shooting from the castle, little tears welled in my eyes. Haha. My two little angels were so bright eyed and in total awe of everything around them, it WAS truly magical.
So props to Walt Disney for making dreams come true. 😉
It will be a regular trip for us now that’s for certain. Riley got to meet Ariel and ride tons of rides. She rode splash mountain which was hilarious!! My mom rode it too, best time ever!

We rode carousel of progress (I think) and saw all of tomorrowland, we rode Aladins magic carpet ride and I was legit scared. We did the haunted mansion ride and the Ariel under the sea ride, pirates of the Caribbean (twice), it’s a small world, and Winnie the Pooh ride. We ate at pecos bill restaurant and the cosmic cafe. Friday night we went to “Mickeys not so scary Halloween party”. Adorable. Going every year now. Riley was doc mcstuffins and trick or treated all over magic kingdom. We went to downtown Disney and walked all over, ate at TREX cafe. So awesome. Riley loved it. So much more to say but can’t even write it all. You all know how amazing Disney is, and if you haven’t been there, book your stay right away because it’s an experience of a lifetime!
turned 26 on my birthday. 26. How did the last 6 years go by that fast? It’s unbelievable. Time is flying. Ella baby is 7 months old. Cry. Tear. Sob. HOWWWW?????? How did this happen. Where did my 20’s go??? I’m only 26 you say? Well I’ll be 30 tomorrow!! I mean really. I have turned into such a granny. It’s funny because I don’t care at ALL. Not one bit. I’m the granniest of grannies and I’m lovin it. Mom life forever over here. I like to think I’m cool sometimes but then my ol’ leopard print night gown puts me into check real quick. Literally yelled at someone on the road today to turn their music down. The music was so loud it could be heard from 3 miles away and screaming all kinds of obscenities in some sort of song that is apparently rap nowadays. I don’t want to walk into the grocery store with my children and hear that garbage. I mean what is it really? I used to really really like rap music lol. But it’s gotten a bit ridiculous. Oh and also I write a blog about my children and crockpot recipes. So cool. 😎
I have 3 recipes for tonight! All are very simple.
first up is the cheesy baked meatballs and spaghetti.
I bought my meatballs pre made at publix. (Italian style pork meat balls). Then I poured half a jar of spaghetti sauce in a casserole dish covering the bottom, whatever kind you like. I used publix premium basil and garlic. Then I placed the meatballs in the sauce spacing them out in the dish. Then poured the rest of the spaghetti sauce on top. I sprinkled with a little Italian seasoning and baked at 350 until meatballs were done. Once meatballs were cooked throughly I covered the top of the dish with Parmesan and mozzarella cheese, basically covering the entire dish lol. Put back in oven and let the cheese melt all over. Boil spaghetti noodles, once boiled, put your noodles on your plate and spoon out your cheesy sauce and meatballs and eat up!
Up next is the slow cooker chicken fajitas!

So- CROCK POT.
1 can diced tomatos- if you like spicy use rotel with green chiles, if not stick with regular diced tomatoes.
1 green, red & yellow pepper- sliced
1 packet of taco seasoning
1 pack of chicken breast
half an onion
2 garlic cloves- minced
the juice of 1 lime
Add half of the peppers and onions and garlic to slow cooker, then pour diced tomatos over, then layer chicken breast on top, coat top of chicken breast with taco seasoning then coat the bottom as well, add the rest of peppers and onions on top. Squeeze your lime juice on top. Cook on high for 3-4 hours until chicken is cooked through and tender. Once cooked through, take out your chicken and shred it, once it is all shredded put back in crock pot and let simmer on low for 15-20 more minutes. Soaking up all the juice! Warm some tortillas and get your cheese, sour cream, salsa and guac ready! It’s a fiesta! I made some zatarains Spanish rice on the side with chips & salsa!

finally the smoked sausage with potatoes & onions!
14 oz smoked sausage- sliced
4 Potatos -sliced
half an onion- slices
dash of hot sauce
2 garlic gloves – minced
2 tablespoons of olive oil
seasoning- I used a mixture of what I had in my cabinet- Italian seasoning, Rosemary, thyme, basil, salt, pepper.
first I heated the olive oil in a pan, then put the potato slices in with rosemary, salt and pepper.
Make sure your Potatos are heating well and continue to stir them in the pan, it takes a little bit to cook them through. Once Potatos are pretty well cooked through put in sausage, onion and rest of seasonings. I put some hot sauce on while cooking (just a little). I stirred everything in pan making sure to heat all the items. Keep on heat until onions are soft and sausage is heated. Once finished I put a little Sriracha on top for some spice and yummy!

Cant believe its almost Halloween. Tomorrow Riley goes on a field trip to the pumpkin patch. I’m gonna go wth her and then we are going to see Hotel Transylvania. Perks of being a stay at home mom. ❤️
