Friiiiiidaaaaay. Thank the lord. Mark will be off work, bless his soul he has been working non stop like a mad man. The company that he works for has finally launched and it really is incredible! It’s a cold pressed juice company created by 12 Jacksonville doctors. They have created 6 different formulated juices that are meant to target specific needs in your diet and your body. When you start reading up on the benefits of cold pressed vegetable juice it is shocking to learn about the benefits it has for your health. I have had all the formulas and I love them! As a matter of fact I crave them! I feel so amazing after drinking them for just a week! Nowadays there are all these powders and drinks and pills that claim to work wonders and be all natural but I’m telling you veggies are the way!! Haha. So…..

Yesterday was such a relax day. The girls literally laid in bed all day and watched spongebob while I folded and put away laundry. I have seen so many spongebob episodes that number one I can recite almost every episode and number two I can tell when it’s “old school” sponge bob or the more “up to date” sponge bob. And then get annoyed when it’s the older version. Really? Who am I. The babes have no idea-
I had Jersey Mikes when they opened & then again he next day. The obsession is real. It is so so good. I have only known Jersey Mikes from living in Kentucky and then when I found out one was coming to Fernandina all my dreams came true. Club Sub Mikes Way! Thanks have a great day.
recipes from this week——
First up is the shredded chicken Alfredo.
1 rotisserie chicken – I used lemon pepper from publix.
2 garlic cloves chopped
half stick of butter
1 1/2 cups heavy whipping cream
1 cup shredded Parmesan cheese
a couple dashes of red pepper flakes
a teaspoon of pepper
1 cup shredded mozzarella cheese
put all of the above in a pan on medium heat. Except chicken. While other ingredients are all melting, start “striping” your chicken. Get as much meat as you can off your chicken and put it in a bowl off to the side. Continue to stir the Alfredo mixture, once all melted turn to low heat and dump in chicken. Boil whatever pasta you prefer. Mix chicken and Alfredo so chicken is good and covered in sauce. Once noodles are boiled, mix together! ??
Next is the spicy chicken sliders- so very easy.
rotisserie chicken on Hawaiian sweet rolls with mayo, Sriracha and salt and pepper! Done! Delish! Leave out the Sriracha and your kids will love them!
And tonight was pork chops & rice! One of my moms recipes that I basically grew up on!
1 pack of boneless pork chops
2 cups minute rice
1 cup beef broth
2 packets of French onion soup mix
1/2 stick of butter
lawrys seasoning salt
sprinkle your chops with lawrys on both sides, however much you prefer. Heat olive oil in pan on stove and throw in a couple chops to just brown them. Both sides. All chops. Once browned put them in a casserole dish. Set to side. Add your 2 cups rice with 2 cups water to pot on stove bring to boil, add beef broth, butter, 1 french onion mix pack. Once boiling, lower heat and cover. Cook rice until it’s almost done by don’t cook completely. Leave a little amount of liquid. Then pour the rice mixture over the pork chops in the casserole dish and sprinkle the top with the 2nd French onion soup mix packet. Put in oven and cook for 45 minutes to your. Continue to check the rice and chops so it doesn’t get too dry.
