is this year fa-lying by or is it just me?? It’s basically Christmas, my 2nd child is almost 7 months old and I’ll be 26 in 10 days!
No but really. bring it on! I’m not one of those holiday haters! Is the Christmas music on yet? Because if it was I would be jammin it!
tonight is the premier of American Horror Story. I’m pumped. Like I have been pumped for a year for this. Obsessed with this show 100%. I’m not a huge fan of lady Gaga so we will see what she has to offer on this season.
So Riley is the celebrity of the week at school this week. Which is awesome for her! She gets to bring in different fun things that she likes and pictures of her familY! She gets to teach the class one day and tell stories. It’s actually really awesome!
So im peacefully trying to take a shower tonight and all of a sudden I hear “hey momma”.
“Hey Riley whatcha doing” – me
“going potty real quick” – ri
about a minute goes by –
“oh gosh” – ri
“what baby” -me
“this poop smells disgusting” -ri
another minute goes by-
she is climbing in the shower with me.
i don’t make this stuff up.
so lately now that I am staying home I have been cooking like crazy! I am in no way a chef and I’m pretty hilarious in the kitchen because literally everything grosses me out and I really don’t know what I’m doing. I really don’t know what has come over me but I am loving trying all kinds of recipes! So I thought I would start sharing! I’ll try to add the most recents ones I’ve made!
Tonight- Mozzarella Stuffed Meatballs
I used extra cheese sticks I had in my fridge and cut them in fours. Then set them off to the side. I used probably 6 or 7 cheese sticks.
In a large mixing bowl combine:
1 pound ground beef
1 pound hot Italian sausage
1/2 tsp garlic powder
2 tsp salt
1 tsp black pepper
1 cup bread crumbs
1/4 cup parmesan cheese
1/2 cup whole milk
1/2 cup chopped parsley
I threw in some red pepper flakes & lawrys because I basically put those 2 things on everything. Spice it up.
Roll golf ball sized balls with the meat mixture. Squish mozzarella cube into the center and pull the edges of the meat ball around it until it’s a new ball again.
Arrange meatballs in slow cooker and cover in tomato sauce.
Cook on high for 2 to 2.5 hours.
I boiled some bow tie pasta and VOILA-
a couple nights ago I made a homemade tortellini Alfredo. It was so good. The sauce was pretty darn close to Olive Garden level.
I used 2 bags of frozen cheese tortellini.
2 garlic cloves chopped
half stick of butter
1 1/2 cups heavy whipping cream
1 cup shredded Parmesan cheese
a couple dashes of red pepper flakes
a teaspoon of pepper
I put the frozen tortellini in a pot of salted boiling water and let that cook and then I started another skillet with all my remaining ingredients. I put in a little bit of olive oil and did the chopped garlic and red pepper flakes first and then added everything else. You will want to keep the heat on low to medium to melt butter and cheese and keep the mixture moving in the pan. Once the tortellini have finished I poured the sauce right over the tortellini and sprinkled on more Parmesan cheese and done. Yum!
Again Im no chef. And it’s a little scary when I’m in the kitchen so if I can do it you definitely can!
Mark and I had a date night last week and went to see The Intern! Super cute movie. Just a cute, feel good, sweet movie. Went to Chilis before and had 2-4-1 drinks. Ya can’t beat that! My margaritas were delicious!
